Consuming a daily serving of broccoli, spinach, avocados, or Brussels sprouts increases levels of an enzyme called glutathione S-transferase (GST) by 24 percent. The enzyme speeds the rate at which the liver burns fat and flushes the body of toxins.

Now I have even more reasons to eat those wonderful Brussel Sprouts!
Kohl crops such as: Brussel Sprouts, Cabbages, Broccoli, and Cauliflower are also excellent sources of naturally occurring Calcium and other micro-nutrients. Just a hint for you southern gardeners – in case you grow your own: Kohl crops do best when planted in the Fall and overwintered, rather than in the early Spring. This is due to our very short periods of springtime and tremendously hot/dry summers.
Although they don’t like the deepest part of Winter, they can be capped with plastic during the few short periods of extreme weather during this time… and once reasonably well established, they can stand up to the occasional frost quite readily. In the Springtime, they’ll take off rapidly and finish their previous fall-time growth. Living in South Carolina, I have learned these things from trial and error over many years.
A commmon mistake of inexperienced southern gardeners is to assume that just because the stores sell cabbage sets, or seed for these things – in the Spring – that they can be successfully cultivated at that time in normal years. A great deal of money and effort is often wasted, due to such ill-advised assumptions. Believe me, I know this from personal experience.
